And since you are reading about low-maintenance vegetables, I thought I would share a trick with you that I have been using: I plant the root end of a used leek or scallion and they grow back. I have a never-ending supply of onion greens! Other things I plant (outside) are potatoes that have grown eyes, ginger and garlic that starts to send up a green shoot on my counter, and the celery base after I cut off the stalks.
